This is a stunning dish to serve as an appetizer. Not only does it look beautiful, it also tastes amazing. The tomatoes are served around a bed of spinach, with garlic aioli and balsamic reduction, topped with a perfectly poached egg in the center.

Dragon Fruit Salad with Grapefruit Vinaigrette
Ingredients:
- 1 Dragon Fruit
- 3 or 4 heirloom tomatoes
- equal parts arugula, spinach and butter lettuce (total amount of greens should not exceed the amount of dragon fruit)
- 1 tbsp of fresh oregano leaves
- 1 tsp of fresh chopped parsley
- 1 or 2 tbsp of grapefruit vinaigrette
- salt and pepper to taste
