Ingredients:
- 1 Dragon Fruit
- 3 or 4 heirloom tomatoes
- equal parts arugula, spinach and butter lettuce (total amount of greens should not exceed the amount of dragon fruit)
- 1 tbsp of fresh oregano leaves
- 1 tsp of fresh chopped parsley
- 1 or 2 tbsp of grapefruit vinaigrette
- salt and pepper to taste
Directions
Slice the top and bottom of the Dragon Fruit. Then carefully and slowly carve the insides of the fruit out. Use a spoon to go around close to the edges, making sure not to reach the skin of the dragon fruit. Once you have carved all the fruit from inside the dragon fruit place all that pulp into a large bowl. Chop the dragon fruit to small enough chunks so they fit back into the fruit’s casing. Not too small though so you some texture when eating. Add all other ingredients into the bowl and mix them well.
Transfer the salad to the empty dragon fruit casing and serve.
This salad is great to serve as an appetizer to impress your guests.
